BIG chicken stock in our tilt kettle!

This is how the stock looked before it came to the boil. Note the 'scum' that's rising to the surface! you have to scoop it off or it makes the stock cloudy.



Here's how it looks when it's done (it simmered for about 5 hours). Isn't the kettle great? You use the 'steering wheel' to lower it down to drain the contents (and save your back!)
