Icing a cake--fast!
After searching online for a short video that really demonstrates how the professionals do it, I found this fantastic video. This pastry chef does in less than a minute what others on you tube spend 10 minutes or more discussing! (Great for short attention spans, and fascinating to watch!)

Beautiful creme caramels
... Or leche flan, as many of our students know it. I learned that this dessert is very popular in the Phillipines, as well as Malaysia, where they eat it with coffee and ice!
